Playful Potato Galette and Mixed Greens Medley
Ingredients
- Montrachet goat cheese
- 2 potatoes
- mixed greens
- olive oil
- salt and pepper
- decorative mouse-shaped olives (as shown in video above)
For vinaigrette:
- 4 tbsp honey
- 1 1/4 cup vinegar of your choice
- juice from 1 lemon and zest
- 1 1/3 cup olive oil
- salt and pepper
Directions
To prepare the Potato Galette, use a cheese grater or a mandoline to shred a couple of potatoes. Leave them in a bowl—do not rinse. In a small sauteed pan, pour a little olive oil, add some shredded potato and press down to make a little nest. Cook for a couple of minutes, flip on the other side and cook again.
Place your galette on a small sheet pan and season with salt and pepper. Add a couple slices of goat cheese then bake in the oven at 400 F for five minutes.
Dress the mixed greens with the vinaigrette and place salad on a plate. Next, put the goat cheese and potato galette on top. Garnish with decorative mouse-shaped olives around the cheese and voilà!
